Ingredients

2 lbs ground beef

1 onion diced

1 jalapeno diced

1 packet of Tony Chachere’s Chili Seasoning Mix

1 14.5 oz can diced petite tomatoes
-
1 can pinto beans
-
2 boxes Mexican corn bread
-
1 can sweet corn
-
1 cup shredded cheese
-
2 tbsp sugar
-
4 tbsp butter
-
Milk
-
Eggs
-
Cilantro
-
Green Onion
- Clear
Directions
- Brown ground beef, onion, and jalapeño in a skillet. Drain fat.
- Add in tomatoes, beans, chili seasoning, and water according to instructions on box. Stir to combine.
- Bring to a boil, reduce heat and simmer for at least 20 minutes.
- While the chili continues to cook, prepare corn bread.
- Combine cornbread box in a bowl with sweet corn, cheese, and sugar. Add in milk andeggs according to instructions on the box.
- Preheat the oven to 400 degrees.
- Add melted butter to the casserole dish. Pour chili over the top, followed by the cornbread mixture.
- Bake for 20 minutes. Garnish with cilantro and green onions. Enjoy!
