Zucchini Bread

This delicious bread is made with zucchini of course! But also has a hint of nuts and cinnamon for some extra flavor.
Prep time: 15 minutes   Cooking time: 60 minutes   Serves: 2  

INGREDIENTS:

3 Whole Eggs
1 1/2 cup Sugar
1 cup Oil
3 teaspoon Vanilla extract
3 cup AllPurpose Flour
3 teaspoon Cinnamon
1/2 teaspoon Baking Powder
1 teaspoon Salt
1 1/2 teaspoon Baking Soda
2 cup Zucchini (diced)
1 cup Nuts (Chopped)

DIRECTIONS:

1: In a large bowl, beat eggs until lemon colored; add sugar.
2: Beat until fluffy.
3: Beat in oil and vanilla.
4: In a separate bowl, sift dry ingredients together.
5: Add dry ingredients to egg mixture, and mix well.
6: Add zucchini and nuts.
7: Spoon into greased and floured loaf pans (8 x 4 x 2 inch).
8: Bake in a 350 degrees oven for 1 hour.
