Chicken Fricassee and Dumplings

Chicken Fricassee and dumplings is a Southern favorite! A creamy and warm meal that will satisfy the entire family.
Prep time: 20 minutes   Cooking time: 60 minutes   Serves: 8  


1 Whole Chicken
4 tablespoon Tony Chacheres Original Creole Seasoning
4 tablespoon Margarine
3/4 cup Milk
1/2 cup AllPurpose Flour
1 Whole Chopped Onions
2 Whole Chopped Celery
1 Whole Chopped Bell Pepper
3 Whole Garlic
1/2 cup Chopped Green Onion
2 cup AllPurpose Flour
2 teaspoon Baking Powder
1/2 teaspoon Salt
1 cup Milk


1: Season chicken with Tony Chacheres Original Creole Seasoning.
2: Melt margarine in a Dutch oven.
3: Dip chicken in milk, dredge in flour, and fry in margarine until brown.
4: Remove chicken.
5: Saute onion, celery, bell pepper, and garlic in pot until tender.
6: Add chicken and enough water to cover.
7: Cook slowly for 1 hour, or until chicken is tender.
8: At this point, add dumplings (recipe follows).
9: Serve over steamed rice and garnish with green onions.
11: In a bowl, sift together flour, baking powder, and salt.
12: Add milk slowly, stirring until batter is smooth.
13: Drop by tablespoonful into fricassee and bring to a rapid boil for 3 to 4 minutes.
14: Lower heat and continue to simmer another 10 minutes.
