Cherry Berries on a Cloud

A light dessert that is very refreshing during the spring and summer time.; Made with a delicious meringue crust, filled with sweet cream cheese and marshmallows then topped with cherries and strawberries.
Prep time: 30 minutes   Cooking time: 1440 minutes   Serves: 12  

INGREDIENTS:

6 Whole Egg Whites
1/2 teaspoon Cream of Tartar
1 teaspoon Vanilla extract
2 cup Sugar
3 ounce Cream Cheese
1 cup Sugar
2 cup Whipped Cream
2 cup Mini Marshmellows
1 can Cherries (Jarred)
1 teaspoon Lemon Juice
2 cup Strawberries (Sliced)

DIRECTIONS:

1: Meringue; In a bowl, beat egg whites with cream of tartar and vanilla.
2: Slowly add 1 cups sugar.
3: Beat until stiff and glossy.
4: Bake in greased 13 x 9 x 2 inch pan for 1 hour at 275 degrees.
5: Turn off oven, leave in 12 hours.
6: Do not open oven door.
7: Filling; In a bowl, combine softened cream cheese with 1 cup sugar.
8: Fold in whipping cream and add marshmallows.
9: Spread on dry meringue and refrigerate 12 hours.
10: TOPPING:
11: In a bowl, mix cherry pie filling, lemon juice, and strawberries.
12: Spread over filling and chill.
13: Cut into 12 square portions. Garnish with a sprig of mint.
