Banana Nut Bread

This can be eaten for breakfast or for dessert. Tastes delicious served both warm and cold.
Prep time: 10 minutes   Cooking time: 60 minutes   Serves: 12  


4 tablespoon Margarine
1 cup Sugar
2 cup Mashed Bananas
1 tablespoon Baking Soda
2 tablespoon Boiling Water
2 cup Eggs
1 teaspoon Lemon Juice
1/2 cup Pecan
2 cup Flour


1: In a bowl, cream margarine and sugar until light and fluffy.
2: Add bananas.
3: In a measuring cup dissolve soda in water.
4: Add dissolved soda, eggs, lemon juice, pecans, and flour to sugar mixture stir
5: Pour batter into a loaf pan coated with cooking spray.
6: Bake in a 350 degrees oven for 1 hour or until center is cooked.
7: Remove from oven and cool on wire rack.
