Baked Potato Soup

This will warm you up even on the coldest of days. Baked Potato Soup is great as a side dish or an appetizer. Serve with remaining green onions, bacon and cheese.
Prep time: 30 minutes   Cooking time: 75 minutes   Serves: 12  


4 pound Potatoes
4 tablespoon Margarine
2/3 cup Flour
6 cup Milk
3 tablespoon Tony Chacheres Original Creole Seasoning
4 cup Green Onions
12 slice Bacon
1 cup Cheddar Cheese
8 ounce Sour Cream


1: Wash potatoes and prick several times with a fork, bake at 400 degrees for 1 hour or until cooked. Let cool.
2: Cut potatoes in half lengthwise, scoop out pulp and set aside in a bowl. Discard skins.
3: Melt margarine in a heavy saucepan over low heat, add flour, stirring until smooth.
4: Cook 1 minute, stirring constantly.
5: Gradually add milk cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
6: Add potato pulp, Tony Chacheres Original Creole Seasoning, 2 tablespoons green onions, cup bacon, and 1 cup cheese.
7: Cook until thoroughly heated.
8: Stir in sour cream.
9: Add extra milk, if necessary, for desired consistency.
