Apple Pecan Pie

A perfect desert for any holiday! Perfect with eggnog and a cinnamon stick.
Prep time: 15 minutes   Cooking time: 85 minutes   Serves: 12  


3 cup Eggs
2 cup Sugar
1 cup Oil
2 teaspoon Vanilla extract
2 3/4 cup Flour
1 teaspoon Salt
2 teaspoon Cinnamon
1 teaspoon Baking Soda
4 cup Apples
1 cup Pecan


1: In a large mixing bowl, beat eggs at medium speed with an electric mixer until thick and pale.
2: Gradually add sugar, beating until blended.
3: Add oil and vanilla beat at low speed until blended.
4: In a separate bowl, combine flour, baking soda, salt, and cinnamon add to egg mixture, stirring until blended.
5: Stir in apples and pecans.
6: Pour batter into a greased and floured 10 inch tube pan.
7: Bake at 350 degrees for 1 hour and 25 minutes or until a toothpick inserted in the center comes out clean.
