Semolina Fried Cauliflower with Spiced Sour Cream

Ingredients

  • Tony’s Original Creole Seasoning, to Taste

  • 8 Ounces Buttermilk

  • 8 Ounces Semolina Flour

  • 1 Head Cauliflower

  • Oil for Frying

  • 4 Ounces Sour Cream

  • 1/2 Teaspoon Tony’s Original Creole Seasoning

  • Clear

Directions

  1. Cut the head of the cauliflower into medium florets and place in a gallon zip bag or leak-proof container with buttermilk. Allow to sit for 2 hours in the fridge.
  2. In another gallon zip bag or container, add the semolina flour. Once cauliflower florets have soaked for 2 hours, remove each cauliflower and place it in the bag. Shake and repeat until each is thoroughly coated.
  3. Preheat fryer oil to 350°F and fry the dredged cauliflower until golden brown.
  4. Remove from fryer and season with a generous sprinkling of Tony’s Original Creole Seasoning, to taste.
  5. Mix together the sour cream and 1/2 teaspoon of Tony’s Original Creole Seasoning to make the Spiced Sour Cream.
  6. Serve fried cauliflower with Spiced Sour Cream and add pickled onions, if desired.
