  • 2 Pork Jowls (1 Pound Each)

  • 5 Cloves Garlic, Whole

  • 2 Celery Stalks, Diced

  • 1/2 Yellow Onion, Diced

  • 1/2 Green Bell Pepper, Diced

  • Tony’s Original Creole Seasoning

  • 3 1/4 Cups Water

  • Grapeseed Oil

  • Apples, Sliced

  • Clear


  1. Season pork jowls generously with Tony’s Original Creole Seasoning. Allow them to sit overnight.
  2. In an Instant Pot or Pressure Cooker, place diced vegetables in and seasoned pork jowls, skin side down. Add in water and seal.
  3. Cook at high pressure for 20 minutes. Allow to rest under pressure for 15 minutes and then release. Remove jowls from pressure cooker and place on a dry towel. Pat dry.
  4. In a nonstick or cast iron pan, heat oil to 350°-375°F, sear jowl skin side down. Caution – skin will pop and splatter a lot. Protect yourself.
  5. Flip jowls in the pan and baste.
  6. Remove from pan and season with a little more Tony’s Original Creole Seasoning.
  7. Allow to cool for 3 minutes to rest the crispy skin.
  8. Slice into desired portions and serve with pressure cooked vegetables and sliced apples.
