Double Baked Potato

One of the most popular side dishes gets a creamy, cheesy and Creole spicy upgrade, thanks to Chef Edouardo Jordan’s take on the Double Baked Potato.


  • 2 Large Russet Potatoes

  • 2 Tablespoons Butter

  • 1 Tablespoon Grated Parmesan Cheese

  • 4 Tablespoons Tony’s Creole-Style Ranch Salad Dressing

  • 3/4 Tablespoon Grated Parmesan Cheese

  • Tony’s Original Creole Seasoning, to Taste

  • Clear


  1. Bake russet potatoes on oven rack for 30-40 minutes at 350°F until tender.
  2. Allow to cool for 10 minutes. Split potatoes in half and scoop out the content without tearing the skin, leaving a potato bowl.
  3. In a small pot, place baked potato, butter, Parmesan and Tony’s Ranch Salad Dressing. Bring to a simmer while mashing until a chunky purée is formed. Using a spoon, scoop mashed potatoes into potato skin bowls and top with more Parmesan and sprinkle of Tony’s Original Creole Seasoning.
