Green Power Mac & Cheese Spaghetti

Have you ever tried greens in your mac & cheese?!?! This recipe, by Pure Vegan Food, is nutritious, delicious and sure to be a hit with the family!

INGREDIENTS:

1 Pound of Pasta (Your Choice)
2 Cups Spinach
1 Cup Parsley
1 Cup Frozen Cauliflower
1/2 Cup Raw Cashews
1/2 Cup Water
1/3 Cup Nutritional Yeast
3 Garlic Cloves
1/4 Cup Avocado Oil
1 Teaspoon Tony's Lite Creole Seasoning

DIRECTIONS:

1. Bring a large pot of water to a boil.
2. Add pasta and cook according to package.
3. Drain and return to pot.
4. In a blender, combine cashews, water, spinach, parsley, cauliflower, garlic, oil and Tony's Lite Creole Seasoning and process until smooth.
5. Add sauce to pot and toss to coat. 
6. Serve Immediately and enjoy!
