Beef stew is one of the most popular comfort foods. As Southern Bite says, it tastes like home! With the addition of green peppers, tomatoes with green chiles and Tony's Original Creole Seasoning, this beef stew has extra flavor that is sure to have you asking for more.
Prep time: 20 Minutes   Cooking time: 7 Hours    Serves: 6-8

2 Lbs. Beef Stew Meat
1 Tbsp. Tony's Original Creole Seasoning
1/3 Cup All-Purpose Flour
3 Tbsp. Vegetable Oil
4 Potatoes, Peeled and Chopped into 1-Inch Cubes
4 Carrots, Peeled and Chopped
3 Celery Ribs, Chopped
1 Medium Onion, Chopped
3 Cloves Garlic, Minced
1 Bell Pepper, Seeded and Chopped
1 Can (14.5 Ounces) Dieced Tomatoes with Green Chiles, Undrained
4 Cups Beef Broth
4 Tbsp. Tony's Brown Gravy Mix

1: Toss the beef with the flour and Tony's Original Creole Seasoning and set aside.
2: Heat the oil over medium-high heat in a large skillet or Dutch oven. Once hot, add about half the beef and brown. Once brown, remove to a plate and brown the other half of the beef.
3: Lightly spray the slow cooker with nonstick cooking spray. Add the potatoes to the bottom of the slow cooker and top with the beef. Then add the carrots, celery, onion, garlic, bell peppers and pour the tomatoes and juice over the top.
4: In a medium bowl, whisk together the beef broth and Tony's Brown Gravy Mix. Pour over the vegetables. Place the lid on and cook on low for 7 to 8 hours.
If at the end of the cooking time, you find the gravy to be too thin, simply mix together 2 tbsp. of corn starch with 2 tbsp. of cool water in a small bowl. Whisk the mixture (it's called a slurry) into the stew. Cover and turn the heat on high until the gravy has thickened.
