Cheesy Cajun Corn & Green Chili Casserole

Up your side-dish game this season with this creamy, cheesy corn and green chili casserole. As The Cooking Mom shows us, this side is easy to make, easy to double, goes with anything you're serving and is full of flavor!

Prep time: 10 Minutes   Cooking time: 45 Minutes   Serves: 4  

INGREDIENTS:

12 Ounces Cream Cheese
2 Eggs, Beaten
1 Cup Heavy Cream
1 Can (4 Ounces) Green Chilies, Diced
1 Tbsp Tony Chachere's Original Creole Seasoning (More to Taste)
2 Cups Colby Jack or Cheddar Cheese, Shredded & Divided
1 Bag (12-14 Ounces) Frozen Corn, Partially Thawed
 
Garnish:
Couple Tbsp - Chopped Tomato, Red Pepper, Jalapeño Pepper, Green Onions, Bacon, or Combination of all (Optional)

DIRECTIONS:

1: Preheat oven to 325°.
2: Unwrap cream cheese and place on a plate. Heat in the microwave for about 30-45 seconds to soften.
3: In a large bowl, mix together all remaining ingredients except for 1 cup of cheese.
4: Spoon mixture into a 9x9 inch or small to medium casserole dish that has been buttered or sprayed with cooking spray.
5: Sprinkle remaining cheese on top.
6: Bake 35-40 minutes or until golden on top.
7: Top with optional garnishes to decorate the top if you'd like.
 
Note:
You can double the recipe and bake in a 9x13 or larger casserole dish.
