Legendary Louisiana chef, Tony Chachere, was known as the "Ole Master" of fine Cajun cuisine. Having started by cooking at his hunting and fishing camp in the swamp near Opelousas, Tony went on to inspire palates across North America with his down home Cajun cooking.
